Paella, Wine tasting & Vina cotta making - This Weekend

It’s an Italian secret. It’s Vino cotto. See it made.

This Saturday at the Merchants 11 am t0 2.30 pm we’re crushing the grapes and cooking them to make Fourth Village Vino cotto, an agrodolce (sweet and sour) condiment. What can you do with it? It’s actually more a question of what you can’t do with it.  

Use it to deglaze the pan when you fry meat or fish and you’ll have a syrupy sauce to pour over the finished dish.
Drizzle it on fresh cheese
Pour it over gelato
Pour it over baby beets before roasting them in olive oil.
Also pour it over figs, apricots plums or quinces before roasting them.
Macerate strawberries in it and then serve them with mascarpone.
Or drizzle it over a radicchio salad

Saturday is Paella Pop Up at Danks Street! 

Just because we’re Italian doesn’t mean we don’t love paella.

And this Saturday between 11am and 2pm paella is being served from the giant paellera (pan) at the Merchants.

Using Bomba rice from La Albufera, the river delta outside of Valencia ¬ ¬– the birthplace of paella – this will be what is known as the renegade’s paella, with chicken, La Boqueria chorizo, peas, pimientos de piquillo, saffron and Anato chicken stock.

For this fiesta, Danks Street Produce Merchants is in partnership with Sydney based importer and manufacturer of Spanish charcuteria La Boqueria and specialist caterer the Flavours of Spain.

Come and see how its made and taste it for yourself. As they say in Spain, Buen Provecho!
