Fresh Off the 'olive' press
First time ever in City of Sydney – olive oil pressing from farm to Danks Street
28 March 2017. Olives from the 2017 harvest, picked at Fourth Village Estate (the Quattroville family farm at Pokolbin in the Hunter Valley), will be freshly pressed on the floor of the Danks Street Produce Merchants, 3 Danks Street Waterloo daily on 7, 8 and 9 April.
Enthusing about his oil, Peter Quattroville said "pressing and bottling the oil this way emphasises the unique flavours of the fresh fruit. We wait all year for the olives to get to this point" he said, "so that flavour and that taste is a year's work. If you haven't had oil this fresh before, you're in for a treat.”
The olive oil fruit will be delivered fresh from the farm and then tipped into our shining olive press. Then among the noise of the press and the aroma of the freshly pressed oil, out will pour the freshest possible florescent green first press olive oil, ready to be tasted, savoured, bottled, and purchased for you.
Once pressed, the oil from Coreggiolo and Frantioio olives from the estate's 15 year old trees, will be on sale at Fourth Village Providore at Danks Street Produce Merchants.
Chef Ricardo Interdonato will be using that fresh oil as it comes out of the press in dishes he has created especially for the harvest season at Mezzanino, the Merchants market restaurant on level one. Phone 02 8123 1120 for reservations.
