Our Chef, Riccardo Interdonato
Riccardo is our secret weapon. From Melbourne, where he has worked at such places as Grossi Florentino. Circa the Prince, Tuscan Bar and Pinocchio, he brings a maturity beyond his years, with skills behind the stove matched by his organisational ability.
Working closely with manager Sal Quattroville, Riccardo has designed the unique – for an Italian restaurant – carrello service which requires intricate co-operation between kitchen and floor.
The dishes he has devised for this service are, we are confident, perfectly suited for a lunch. You will eat well (check out the menu), but not be weighed down. And you will be served swiftly.
Much of the food in Riccardo’s menu will come from the market floor, and will align closely with what is best and fresh on the day.
